Mini Tomato Pies

This is a 3 in 1 recipe. It can be an appetizer, a single veggie serving or a family size veggie dish. By changing from a mini fillo shell to a small pastry shell or a 9 inch pie shell.

Ingredients

MeasurementIngredient
1 cuptomato's, diced
10fresh basil leaves, chopped
1/2 cupgreen onion, chopped
15mini fillo cups
1 cupmozzarella cheese, grated
1 cupcheddar cheese, grated
1 cupmayo
salt & pepper

Directions

Preheat oven to 300 degrees F.

Place mini fillo shells on a baking sheet. Mix tomatoes, basil, onion, salt & pepper. Place in shells. Combine cheeses and mayo, cover tomato mixture with cheese mixture.

Bake 8-12 minutes until cheese melts.
